No coconut Healthy Fish Curry
Ingredients:
Olive oil – 5 tbsp
Garlic – 1 bulb
Onion – 5 bulbs
Young Ginger – 1 inch
Curry powder – 3 tbsp
Star anise, clove, cardamom – a pinch of the mixture
Cinnamon – 1 stick
Curry leaves – 5 – 10 leaves
Fish – mackerel / tenggiri / salmon / ikan merah (either one or the big fishes can be mixed)
Tomato – 3 pieces
Green chilli – 5 pieces
Carrot – 2 pieces
Fresh milk – 1 cup
Water – 3 cups
Lemon juice – 1/2 piece
Brown sugar – 1 tbsp
Salt – 2 tsp
Directions:
1. Heat the oil
2. Add the garlic, onion, Ginger, star anise, cardamom, clove and curry leaves. Fry until golden brown.
3. Mix the curry powder with water. Stir until dissolved. Add the mixture into the pot and fry until it changes to a darker brown. Stir to make sure it doesn’t burn.
4. Add milk and water to boil.
5. Add the fish, tomato, fish, green chilli and lemon juice. Close the pot and bring to boil.
Serve with rice, brown rice or bread. Enjoy!
Potatoe d’ Olio
Ingredients:
Potato wedges – 200gm
Chicken sausage – 2 sticks (thinly sliced)
Cheddar / mozarella cheese – 20gm
Black pepper
Olive oil – enough to cover the frying pan
Directions:
Heat the olive oil.
Pan fry the potatoes, followed by the sausages.
Serve in the serving dish.
Sprinkle the cheese and black pepper.
Great to be served for tea. It’s a hit with the kids.

Toasted Salmon Cream Cheese Sandwich
Ingredients:
- a can of salmon
- some cream cheese
- some parmesan/mozarella cheese
- 4 pieces of wholewheat bread
- salad of your choice (i like Romaine because it’s not bitter, you can have it even without any dressing)
Method:
- spread some cream cheese (as much as you like) on your bread
- spread the salmon flakes on the bread
- sprinkle some parmesan/mozarella cheese (or both)
- put it in sandwich maker/ bread toaster
- serve with salad on the side

Ice Blended Green Apple Juice (Jus Epal) with Asam Boi
Ingredients: (makes 2 glasses)
- One green apple
- 2 tsbp sugar
- 2 cups ice
- 1 cup water
- 2 Asam Boi
Method:
- cut the apple into 8 small pieces
- blend with sugar, ice and water
- pour into two glasses and add asam boi
Masak Lemak Cili Api Daging Bakar (Salai) / Grilled Beef with Hot and Creamy Gravy
Ingredients:
- 1 kg beef
- 1 1/2 cup thick coconut milk (from approximately 1 1/2 coconut)
- 1 handful fresh turmeric
- 1 handful chili padi
- 1 handful asam belimbing
- 3 tsp salt
- 2 cups water
Method
- Divide beef into 4 parts of approximately 250gm each. Grill in a 200 degrees Celsius oven for 50 minutes. *You may choose to salai (BBQ) with charcoal on a BBQ grill or classic clay stove.
- Cut into small pieces thinly.
- Blend chili padi and turmeric
- Cook the beef with boiled water, chili padi and turmeric until tender
- Cut asam belimbing into two.
- Add asam belimbing, coconut milk and salt.
- Stir and let it boil for a while. *Always stir after adding coconut milk to avoid appearance of coconut oil
Chocolate Cheesecake with Blueberry Topping
Ingredients A
- 1 pckg. of Philadephia cream cheese
- 1/4 pckg. butter
- 3/4 tin condensed milk
- 2 tbsp fresh milk
- 1 tbsp lemon juice
- 5 tbsp flour
- 1 tsp baking powder
- 1 tbsp cocoa powder
- 2 eggs
Crust
- 10 cream crackers
- 1/3 pckg. butter
- 1 tbsp honey
Topping
- Blueberry/ Blackcurrant/ Raspberry Jam
- Mix everything of ingredients A in a mixer.
- For the crust, crush (you may use a plastic and crush) the crackers and add the melted butter and honey.
- Lay the crust in a baking pan
- Add ingredients A on top of the crust.
- Bake for 20 minutes in a 175 degrees Celsius oven
- Top with fruit jam of your choice
Cokodok (Banana Dumpling)
Resipi:
6 biji pisang berangan (sederhana besar)
Secubit garam
3 sudu besar gula
8 sudu besar tepung gandum
1 sudu kecil soda bikarbonat
Minyak untuk digoreng.
Kisar pisang, gula dan garam. Ayak tepuk dan soda bikarbonat. Kemudian, campurkan di dalam mangkuk bahan yang dikisar bersama tepung dan soda bikarbonat.
Jemput dengan tangan dan goreng di dalam minyak yang banyak.
Teh Tarik
Serving: One cup
1 cm tall tea that has been soaked (concentrated)
3 tsp Condensed Milk
1 tsp Evaporated Milk
Put milk in the cup. Add concentrated tea with approximately the height of 1 cm. Add boiling water to fill the cup. Stir vigarously. Take a big mug and pour the mixture from the cup at a height of one arm length. Again, pour the mixture from the big mug into the cup. Repeat until you get the desired froth.
